A native San Diegan, Tomme returned home to San Diego in 1995 after earning his Bachelor of Arts in English from Northern Arizona University where he cultivated his passion for brewing. In March of 1996, he began his professional brewing career at the now defunct Cervecerias La Cruda (The Hangover Brewery) in downtown San Diego. Cervecerias La Cruda earned a Gold Medal at the 1996 Great American Beer Festival and at that point it was only the second Gold Medal earned at this prestigious competition by a San Diego brewery.

After La Cruda closed it doors in March of 1997, Tomme went to work for White Labs in San Diego. Working with Chris and Lisa White, Tomme spent his days selling yeast and developing product as he waited patiently for the right brewing job to become available. In May of 1997 he was hired by Pizza Port in Solana Beach where he remained the Head Brewer until June of 2005 when he was named Director of Brewery Operations for Pizza Port. 

During the 8 plus years that Tomme was Head Brewer in Solana Beach, the brewery won 13 Great American Beer Festival Medals, numerous medals at the Chicago Real Ale Festival as well as other regional and national competitions. In 2003 and 2004 Pizza Port Solana Beach was named Small Brewpub of the Year. Tomme was also named Small Brewpub Brewer of the year for both years.

After joining Port Brewing in 2006, Tomme kept up his winning ways. In 2007 Port Brewing was named Great American Beer Festival Small Brewery of the Year, and Tomme Small Brewer of the Year. In 2008 he and Port Brewing were named World Champion Small Brewer and Brewery at the international World Beer Cup. Since then he’s taken home a raft of medals and been consistently noted as one of the world’s top brewers.


Matt’s storied career in craft beer started simply enough with a job in Michigan as a hops chemist, putting to use the chemistry degree he earned in 1993 from Kalamazoo College. A dedicated homebrewer, he soon decided to make the leap to professional brewing, and after graduating from the Siebel Institute in Chicago, made his way to Goose Island. There, he shot up the ranks to head brewer as the brewery itself grew in stature. In 2000, he heeded the call to go west, joining the SLO Brewing Company, and became head of brewing operations after the acquisition of SLO by Firestone Walker Brewing Co.

The past fourteen years with Firestone Walker Brewing Co. have been marked by explosive growth, buoyed by a fundamental dedication to expert brewing craft and driven by Matt’s own meticulous dual focuses on process and technique plus world-class sensory analysis. He’s a renowned hops expert, and under his leadership Firestone Walker Brewing Co. has won a total of 42 medals at GABF (20 of them gold). At this retreat, Matt returns to his homebrew and pilot brewing roots and is looking forward to sharing two decades of professional brewing experience with attendees.


As “chief barrel herder” for Avery Brewing Co., Andy Parker oversees one of the more expansive barrel-aging programs of any brewery in the US, producing both clean and sour hits like the bourbon barrel-aged Uncle Jacob’s Stout as well as their new widely-distributed Raspberry Sour. Parker is well-known among professional brewers as a consummate brewer’s brewer, with a deep knowledge of mixed-culture fermentation and a finely honed palate. Despite his penchant for brewing 15%+ barrel-aged stouts, Parker consumes more pilsner than any other style of beer.


Boulevard Brewing Co. Brewmaster Steven Pauwels is responsible for one of the most popular saisons in the United States, Tank 7. The transplanted brewmaster has degrees in biochemical engineering from KaHo Sint-Lieven and experience brewing at Brouwerij Krugar, Domus brewpub, and Brouwerij Riva.


Dick Cantwell has been a Pacific Northwest brewing mainstay since moving to Seattle in 1990.  In 1996 he co-founded Elysian Brewing Company, where he served as head brewer until the company sold to Anheuser-Busch Inbev in 2015.  At Elysian he was named Large Brewpub Brewmaster of the Year at GABF in 1999, 2003 and 2004, and in 2004 he received the Russell Schehrer Award for brewing innovation. He has written for numerous beer publications, and has published Barley Wine (with Fal Allen), the Brewers Association Guide to Starting Your Own Brewery (Second Edition), and Wood & Beer (with Peter Bouckaert).  He is currently at work on a book on "Eclectic' IPA.

Neil has been homebrewing for more than five years and since his first batch, he dreamed of opening his own brewery. WeldWerks Brewing is the culmination of that dream. Less than a year into brewing, WeldWerks picked up a silver medal at the Great American Beer Festival in 2015. Neil joined us for the Brewers Retreat at Devil's Thumb Ranch in 2015 and is coming back as an instructor to share all of his knowledge about opening an operating a brewery.

WeldWerks was just voted the #1 new brewery in the country by the USA TODAY® contest.


Brad started Beer Smith, LLC in 2003 and has grown his business to be the most utilized brewing software in the world. He is the author of Home Brewing with BeerSmith, and he is the developer of the BeerSmith Brewing Software. In addition, Brad has developed many other products, such as instructional videos, podcasts, and apps. Brad is an expert homebrewer with an MBA, MS, and PhD in Engineering.

How many tickets are available to purchase?

The retreat will have no more than 50 brewing attendees total ('Companion Ticket' attendees will not be brewing). We will have five brews going at a time each day so groups will be about 10 folks for each brew. This is a hands-on experience where the attendee will be actively brewing with the best. It is not a demonstration. 
When is the last day I’m able to purchase tickets?
The last day you can purchase a ticket is when we sell out.
If I purchase a brewer ticket now, can I purchase a companion ticket for the same event later or do they both need to be purchased at the same time?
You do not need to purchase the companion ticket at the same time. Just let us know if and when you want to add your companion. We’d like to know about 30 days ahead of the event so we can make arrangements.

Are the identified Master Brewers confirmed to participate?
Tomme, Matt, Andy, Dick, and Steven are confirmed.
What type of beer will be brewed?
Each of the pro brewers will bring a recipe which will be announced closer to the retreat. We will be brewing five different types of beer. Each beer will be brewed on Monday and Tuesday.
What type of system will we be brewing on?
There will be five Ruby Street brewing systems.
Will retreat attendees be allowed to participate in the brewing process?
You will be allowed to participate in the brewing process and collaborate with the pro brewer.
What are we going to do with the beer we are brewing?
We expect there will be about 20 gallons of each of the five beers by the end of the three days. The Craft Beer & Brewing team will bring the batches back to our offices and ferment the beer. When the beer is ready, we will bottle and ship about 6 bottles to each of the participants.

What time can we arrive at Devil’s Thumb Ranch?
You can arrive in the morning to participate in the activities they offer; however, you may not be able to check into your room until later in the day.
How late can we stay at Devil’s Thumb Ranch on Wednesday?
You can stay for the day to participate in the activities they offer; however, you will need to be checked out of your room by noon if you're not staying Wednesday night.
Can we extend our stay at Devil’s Thumb Ranch?
There are rooms available following the event, which can be offered at the group discount rate. The Ranch is fully booked prior to the retreat. Contact us at support@beerandbrewing.com if you would like to extend your stay.

May I be provided a discount if I don't use your transportation?
There will be no discount if you do not use our transportation. The transportation is included in the overall package.

Are discounts offered for breakfast or purchased drinks?
There are no discounts available to our group for breakfast or for individual beers purchased on-site.
How much beer will be provided at the pairing dinner?
3 or 4 ounce pours for each of 5 courses. Anything above that can be purchased.
How many drinks will I get during the evening gatherings?
We will provide at least 1 drink coupon per evening. Anything above that can be purchased on-site.
